Locust bean gum is a natural vegetable binder and thickener. It can be used instead of flour, starch or egg yolk. It can bind between 80 to 100 times its own weight (swells 5 times more than starch), stabilizes emulsions and prevents the formation of crystals.
It is used in confectionery products, sauces, soups, puddings and ice cream. For dietetic purposes locust bean gum is used as a baking aid in gluten free bread.
Use: Mix well with cold liquid or before cooking. It is recommended to mix the locust bean gum with other ingredients in the recipe to prevent clumps.
