Sauté the onions and garlic in a pan in the oil until they are lightly browned.
In the meantime, mix the flour, baking powder, salt and nutmeg. Add the soy milk, grated cheese, as well as the onions and garlic. Set aside for a few minutes.
Heat a non-stick (or lightly oiled) pan on medium heat. With a ladle pour the batter into the pan and put on the lid.
When the pancake looks a bit dry on to, carefully flip it and cook the other side. Serve warm.
